We like to use mozzarella cheese, but you could switch it up by topping it with a different kind. Goat cheese works well as well and adds a creamy, cooling effect to the dish. 

Do Cherry Tomatoes Work for This Grilled Bruschetta?

You can certainly use some cherry tomatoes. We like to use Roma or vine tomatoes to cook this recipe. They have to be seeded and diced anyway, so cherry tomatoes would work just fine when creating this delicious appetizer. 

How Long Does it Take to Grill This Recipe?

It takes about an hour and a half to create this recipe. The topping must be refrigerated for at least an hour before assembling the bruschetta. This allows all the ingredients to incorporate and meld together to create an outstanding flavour. 

What Kind of Bread Do I use for This Grilled Appetizer? 

We like to use fresh crusty bread to make this recipe. A large baguette works well as it holds up to the topping without getting soggy. In fact, toasting then baguette on the BBQ makes it even harder for it to become soggy.

What Do You Need to Make This BBQ Bruschetta? 

This delicious recipe only really requires a few ingredients. Don’t skimp on the fresh basil though, it adds a delicious flavour dimension to this appetizer. 

  • 1 Baguette, Sliced
  • Premium Mozzarella, Sliced

For the Bruschetta Mix:

  • 1 medium sized Scallion, minced
  • 1 large clove Garlic, minced
  • 4 medium sized Roma or vine tomatoes, seeded and diced
  • 1 tbsp fresh basil, minced
  • 1 tbsp olive oil
  • Salt and Pepper to taste
  • 1 to 2 tsp of balsamic vinegar to taste

For the baguette:

  • 2 tbsp of olive oil
  • 1/4 tsp of sea Salt
  • 1/2 tsp pepper

How to Make BBQ Bruschetta 

Step 1 

In a medium bowl combine all Bruschetta mix ingredients well, ensuring to season to your taste. Seasoning is important. Make sure not to skip this step. 

Step 2 

Let the Bruschetta mix rest for 1 hour (or overnight) in the refrigerator. This will help the flavors to combine well. 

Step 3 

Cut your baguette diagonally. Brush both sides of the baguette with olive oil and sprinkle with sea salt. Doing this helps to create a crisp and heartier bite. 

Step 4 

Turn your barbecue on high and grill one side of all bread slices until grill marks are present.

Step 5

Put your Bruschetta mix on the grilled side of bread and top it with Mozzarella. Barbecue the bruschetta on medium heat until cheese starts to melt. As a result, you are going to see grill marks on the bottom of the bread. This means it is ready.

Step 6

Serve and be awesome!

Can BBQ Bruschetta be Made in Advance? 

To make this ahead, you can make the mix and store it in the refrigerator for up to 3 days. You can also slice the bread and store it in the cupboard until ready to use. If you assemble this bruschetta and store it, it will become soggy. It is best to store them seperately until ready to serve.
